
Chicken Gnocchi Soup
A simple and delicious chicken gnocchi soup better than Olive Garden.

Cut all your veggies and set aside.

Mix chicken breast with olive oil, paprika, garlic salt, and pepper.

Sear the chicken breast in olive oil on medium heat on each side for a couple minutes. Set aside.

Melt butter in the pot and add onion, celery, and carrots. Stir and cook for 5 minutes.

Add garlic, Italian seasoning, and thyme. Cook for 5 more minutes, then add flour and stir.

Add chicken broth and chicken bouillon and stir. Once it comes to a boil, turn to medium low heat, place chicken back in, cover, and cook for 15 minutes.

Take chicken out and shred or chop. While chicken is out, add half-and-half. Once it comes to a gentle boil, add gnocchi and boil for 5 minutes, covered.

Turn heat off and add chicken back in and spinach. If too thick, add a little milk. Top with parm.
