
Italian Cabbage Soup

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté 10–15 minutes, stirring occasionally, until tender and lightly browned.

Add diced tomatoes, potatoes, cabbage, and vegetable broth. Bring to a boil, then reduce heat to medium-low and simmer 35–40 minutes, until the potatoes and cabbage are very tender.
