This Italian Cabbage Soup is the kind of simple, nourishing comfort food you’ll want on repeat all fall and winter. It’s packed with tender potatoes, sweet sautéed veggies, and melt-in-your-mouth cabbage in a herby tomato-broth base.

    In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté 10–15 minutes, stirring occasionally, until tender and lightly browned.

    Add oregano, turmeric, salt, and pepper. Stir and cook for 1 minute to bring out the flavor.

    Add diced tomatoes, potatoes, cabbage, and vegetable broth. Bring to a boil, then reduce heat to medium-low and simmer 35–40 minutes, until the potatoes and cabbage are very tender.

    Taste and adjust salt and pepper. Stir in dill, turn off heat, and serve hot.
