    Whisk or process all dressing ingredients together.

    Heat 2 tbsp of oil in a large frying pan or wok on high heat.

    Add mushrooms, broccoli, carrots, and pepper; stir fry for 3-4 minutes until tender.

    Add rice and spring onions; cook for another 3-4 minutes until reheated.

    Drizzle in the peanut sauce and stir for 30 seconds to warm through.

    Serve immediately topped with chopped coriander and salted peanuts.
