
Coconut Lime Lentils from EPISODE 4 of BROKE GIRL BEANS.
Oil on pan - medium heat
Sear onions, garlic and ginger until onions are translucent
Add curry and tomato paste - burn a little to add extra flavour
Add in coconut milk, brown sugar, soy, lime juice + zest, water and lentils
Taste and add a little salt
Simmer for around 25 minutes while stirring every now and then - until lentils are soft
Add frozen spinach and simmer until thawed
Taste and adjust with more salt, soy, sugar etc if needed
Serve with quinoa/rice & top with coriander and a dollop of yoghurt
