Heat 30 g butter in a large skillet over medium-high heat until foaming.
Add the sliced beef in a single layer. Sear for 1 to 2 minutes per side until browned but still slightly pink inside.
Season the beef with salt and black pepper, then add the minced garlic and ginger to the pan. Cook for 30 to 60 seconds, stirring, until fragrant but not burnt.
Pour the fish sauce and coconut aminos mixture over the beef and toss quickly to coat. Let it bubble for 30 seconds, then remove the beef to a warm plate, leaving any pan juices in the skillet.
Reduce the heat to medium and add 10 g butter to the same skillet. Crack the eggs into the pan and cook to your preferred doneness (sunny side up or over easy), spooning some of the pan butter over the tops.
While the eggs finish cooking, return the beef briefly to the pan edges to rewarm, or keep it on the plate if already hot enough.
Transfer the beef to two serving plates, drizzle with any remaining pan juices, and top each portion with two eggs. Finish with 5 g butter dotted over the hot beef and eggs before serving.
