
ALL those flavours, grilled chicken, oozy eggs, crispy bacon and crisp lettuce tossed in a creamy dressing with sourdough croutons for crunch.
Bring a saucepan of water to the boil, carefully lower in the eggs and cook for 8 minutes. Transfer to cold water. Leave for a few minutes then peel.
Heat the oven or air fryer to 190°C. Dice the sourdough into cubes. Add the sourdough cubes to a tray and toss them through with olive oil salt, pepper and some garlic granules. Bake until crisp and golden.
Lay the Parma ham out in a single layer and cook for 5 to 7 minutes until crisp. Set aside to cool.
Mix all the dressing ingredients in the base of a mixing bowl, season with salt and pepper. Taste and adjust the lemon, mustard and seasoning to suit you.
Add the lettuce, tomatoes, red onion, crispy ham, croutons, and chicken. Roughly chop the eggs into large chunks and fold in (I plated mine like this for aesthetics!) Finish with extra chives and dive in.
