Cut 2 hard-boiled eggs in half lengthwise; remove the yolks and place them in a large bowl. Set the egg white halves aside. Add yogurt, oil, salt and pepper to the bowl with the yolks; whisk until smooth and creamy.

Roughly chop the reserved egg white halves and the remaining 6 eggs. Add to the yogurt mixture along with celery. Fold until the mixture is creamy and evenly combined. Stir in water, as needed, to reach the desired consistency. Garnish with celery leaves, if desired.
