Tandoori-spiced grilled paneer burgers loaded with crisp veggies and tangy green chutney, served over a rich, creamy makhani dipping sauce.
In a mixing bowl, combine Greek yogurt, ginger-garlic paste, lemon juice, turmeric, chili powder, garam masala, and salt. Mix well into a smooth marinade.
Coat the paneer slabs evenly in the marinade, cover, and let rest.
Heat oil or butter in a pan over medium heat. Add cumin seeds, bay leaf, garlic cloves, and minced ginger, cooking until fragrant.
Add chopped red onion and sauté until softened, then add chopped tomatoes, coriander stems, and seasoning spices (turmeric, chili powder, garam masala, and salt). Cook until tomatoes break down.
Transfer the cooked sauce base to a blender and blend until completely smooth.
Pour the sauce back into the pan over low heat, stir in heavy cream, and simmer until rich and thickened.
In a separate grill pan over medium-high heat, cook the marinated paneer slabs for 3-4 minutes per side until nicely charred with grill marks.
Spread mayonnaise on the bottom burger buns, then layer with lettuce, a grilled paneer slab, green chutney, red onion, sliced tomato, and cucumber ribbons. Top with the bun lids.
Spread the warm makhani sauce across a serving platter, drizzle with cream, and garnish with fresh coriander leaves and sliced chilies. Arrange the burgers on the sauce to dip and serve.
