Preheat the oven to 200°C.

Wash and halve the baby potatoes, then place them in a large bowl.

Toss the potatoes with olive oil, melted butter, garlic powder, onion powder, paprika, salt, and black pepper.

Spread the potatoes evenly in a baking dish.

Roast for 30–35 minutes, stirring once halfway through, until the potatoes are tender and golden.

Sprinkle the cheddar, mozzarella, and Parmesan cheese evenly over the top.

Return the dish to the oven for 5–7 minutes until the cheese is melted and bubbly.
