A light, fresh, high-protein pork dinner: quickly seared lemon-herb pork tenderloin served with sautéed green beans and toasted almonds for a crisp, low-carb side.
Pat the pork tenderloin dry with paper towels and cut it into 4 equal pieces.
In a small bowl, mix 1 tbsp olive oil, 1 tsp salt, 0.5 tsp black pepper, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp dried thyme, 1 tbsp lemon juice, and 1 tsp lemon zest to form a marinade.
Rub the marinade over the pork pieces and let sit at room temperature for 5 minutes while you prepare the vegetables.
Trim the ends from the green beans and rinse them under cold water.
Heat a large skillet over medium-high heat and add the marinated pork pieces.
Sear the pork for 2 to 3 minutes per side until browned, then reduce heat to medium and cook for another 4 to 6 minutes, turning occasionally, until just cooked through. Remove pork to a plate and tent loosely with foil.
In the same skillet, add 10 ml olive oil and 1 tbsp water, then add the green beans.
Season the green beans with 0.25 tsp salt and 0.25 tsp black pepper and sauté for 4 to 5 minutes, stirring often, until crisp-tender.
Add the sliced almonds to the skillet and cook for 1 to 2 minutes more until lightly toasted, stirring so they do not burn.
Slice the pork and serve onto two plates. Divide the green bean almond sauté alongside the pork and spoon any pan juices over the top. Serve immediately.
