Cook soba noodles (read instructions on the package), then rinse under cold water. Lightly grill the tofu until golden on each side. Blend together the tahini mustard tamari lemon and olive oil until creamy. Add noodles, radicchio, chicory, carrot, cucumber, and nori sheets to a bowl. Pour over the sauce and toss well to combine. Top with alfalfa sprouts, parsley and gomasio before serving.
