A festive twist on the classic Kaju Katli, made extra indulgent with a chocolate coating.
Drain the soaked cashews completely. Blend them with 15 g milk into a smooth, thick paste.
In a non-stick pan on low heat, combine the cashew paste, ghee, milk powder, cardamom powder and icing sugar. Stir continuously for 1–2 minutes until glossy and it forms a soft dough.
Grease your palms with a little ghee. Divide the mixture into 5–6 equal portions and roll into smooth balls. Freeze for 15 minutes.
Melt the white chocolate in short microwave bursts. Dip the chilled truffles into the melted chocolate, remove the excess and place them on parchment paper.
Immediately garnish with chopped pistachios or dried rose petals. Refrigerate for 5 minutes, until the chocolate coating is set.
