Preheat oven to 180°C (fan-forced) and line a tray with baking paper.
Spread edamame into 2 flat rounds on the tray.
Sprinkle each with mozzarella evenly.
Bake for 12–15 minutes until golden and crisp around the edges.
Let cool before peeling off the paper.
Top with mashed avocado, a fried egg, chilli oil crisp, sesame seeds, chives, and coriander.
