Preheat oven to 375 F.
Beat butter and sugar until light and creamy (about 2-3 minutes).
Add egg and vanilla extract and blend until combined.
In a separate bowl combine flour, baking soda, and baking powder.
Slowly add dry ingredients into wet ingredients.
Mix in sprinkles with a spatula.
Using a large ice cream scoop, roll dough into balls, roll the balls into sugar and top with extra sprinkles.
Place on a lined baking tray (only 6 balls per tray as they will spread).
Bake for 10-12 minutes.
