Fry beef in pan with 1tbsp taco seasoning and the tomato puree, let it cool.
In a large mixing bowl, add the lettuce, sweetcorn, tomatoes, onion, beans, red peppers, jalapeños and cooked beef.
Blitz together the cottage cheese, 1tbsp taco seasoning and pickled jalapeño juice until smooth.
Pour this over the top of the salad, mix until fully combined and divide into 4 portions.
