Feta cheese – ¾ cup, crumbled. 4. Fresh spinach – 2 cups, chopped. 5. Red bell pepper – 1, diced. 6. Red onion – ½, diced. 7. Extra‑virgin olive oil – 2 tbsp. 8. Dried oregano – 1 tsp. 9. Fresh thyme – 1 tsp, chopped. 10. Salt & black pepper – to taste. Method: 1. Preheat oven to 180 °C (350 °F). Grease two glass dishes with 1 tbsp olive oil. 2. Whisk eggs, milk, salt, pepper, oregano & thyme. 3. Sauté onion, bell pepper & spinach in remaining 1 tbsp olive oil for 3 min. 4. Mix vegetables into egg batter; add feta. 5. Pour into dishes and bake 35‑40 min until set & golden. 6. Cool 5 min; serve warm.”.
