A delicious strawberry cake with a crumble topping, featuring a layer of strawberries in the center.
Cream together the butter and sugar until light and fluffy.
Add in the vanilla and eggs, one at a time, until fully incorporated.
Sift in the dry ingredients and fold to combine.
Fold the dry ingredients into the wet ingredients, alternating with milk, to form a thick batter.
Transfer half the batter into a prepared 8 inch loaf and top generously with a layer of strawberries. Dust the strawberries with a spoon of flour to prevent them from sinking.
Top with the remaining batter and bake at 180C for 40-45 minutes, or until a skewer inserted in the centre comes out clean.
