Heat olive oil in a pan over medium heat and cook the chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside. Sauté Mushrooms & Garlic In the same pan, add a little more oil if needed. Sauté garlic for 30 seconds, then add mushrooms and cook until soft and slightly browned. Add Spinach Stir in fresh spinach and cook until wilted. Make the Creamy Sauce Pour in chicken broth and let it simmer for a minute. Add heavy cream, parmesan cheese, and Italian herbs. Stir until smooth and slightly thickened. Combine Everything Return the chicken to the pan and coat it with the creamy sauce. Let it simmer for 2–3 minutes so the flavors blend.
