
Vegan Jamaican Ginger Cake with a maple glaze.
Preheat the oven to 170掳C.
In a blender add the sliced ginger and milk and blend until smooth.
Strain the milk to remove the ginger pieces. Set aside.
In a mixing bowl add the flour and baking soda and mix until well combined.
In a separate mixing bowl add the butter, molasses, ground ginger, vanilla and milled flaxseeds and mix until well combined. Then stir in the brown sugar.
Then fold in the dry ingredients and ginger milk. Careful not to over mix.
Pour batter into a prepared baking tin and bake for 40-45 mins.
Prepare syrup and pour over the warm ginger cake.
In a pan add the ginger and water and boil for 2 mins.
Then add the remaining ingredients and cook down for 4-5 mins until the sauce has thickened. Then remove from heat.
