Bring a pot of water to a boil and blanch bok choy for 1–2 minutes until just tender but still vibrant green. Drain and set aside. Heat oil in a pan over medium heat. Add ginger and garlic, sauté for 30–40 seconds until fragrant. Stir in chili flakes and cook briefly. Add soy sauce, oyster sauce, sugar, vinegar, and water. Mix well. If you want a thicker sauce, dissolve cornstarch in a little water and stir it in. Cook until slightly thickened. Arrange bok choy on a plate and pour the hot ginger chili sauce over it.
