Roast the sweet potato at 200°C (390°F) for 45 to 60 minutes until completely soft. Scoop out 260g of flesh and mash until smooth. 2. Chill the sweet potato purée for at least 30 minutes (or overnight) for a crunchier cereal. 3. Preheat the oven to 180°C (355°F). 4. Mix together the sweet potato, rolled oats, melted butter, 40g of the honey, vanilla extract and sea salt until well combined. 5. Press the mixture firmly onto a lined baking tray into a rectangle about 1 to 1.5cm thick. 6. Bake for 20 to 25 minutes until lightly golden. 7. While still warm, break into clusters. Drizzle over the remaining 20g honey, toss gently and spread back onto the tray. 8. Bake for another 15 to 25 minutes, turning every 5 to 10 minutes until deep golden and crisp. 9.
