
Mexican Beef Rice Bowls
A hearty and flavorful dish perfect for meal prepping, combining seasoned beef with rice and beans for a protein-packed meal.

Brown the beef in a large pot over high heat in 2–3 batches. Don't crowd the pan. Set aside.

In the same pot, cook onions in a little oil for 5 minutes. Add garlic for 1 more minute.

Add tomato paste, stir for 2 minutes. Add all spices, stir for 1 minute until fragrant.

Return beef to the pot. Add chopped tomatoes. Simmer uncovered on medium-low for 15–20 minutes until thickened.

Stir in beans and corn. Cook 5 more minutes. Season well.

Cook 900g dry rice. Season with salt.

Portion 270g cooked rice + 310g beef mixture per container. Cool before sealing.

Store in the fridge for up to 5 days. Reheat in microwave with a splash of water on the rice. Keep toppings separate, add fresh daily.
