In a small bowl, whisk together coconut aminos, fish sauce, rice vinegar, water, minced garlic, minced ginger, and half of the sea salt. Set aside as your stir-fry sauce.
Pat the beef strips dry with paper towels and season with the remaining sea salt, black pepper, and chili flakes.
Crack the eggs into a bowl and whisk until smooth.
Heat 10 g butter in a nonstick skillet over medium heat. Pour in half of the beaten eggs to make a thin omelette. Cook until just set, flip briefly, then slide onto a cutting board. Repeat with remaining eggs using another 10 g butter.
Roll the omelettes and slice them into thin ribbons to create an egg "noodle" base. Divide the egg ribbons between two serving bowls.
In a separate large skillet or wok, heat beef tallow over medium-high heat until hot.
Add the seasoned beef strips and sear for 3 to 4 minutes, stirring occasionally, until browned on the outside and just cooked through.
Reduce heat to medium and pour the stir-fry sauce over the beef. Simmer for 2 to 3 minutes, stirring, until the sauce thickens slightly and coats the meat.
Taste and adjust seasoning with extra salt or chili flakes if desired.
Spoon the saucy beef over the egg ribbons in each bowl and serve hot.
