715 likes, 54 comments - adamhoad_coaching on December 9, 2025: βπΎ Save this recipe for later HERE ‡οΈβ¨ π§ Lemon Blueberry Muffins Recipe (6 servings): π₯£ 150g full fat cottage cheese π― 40g maple syrup or honey π₯ 35ml semi-skimmed milk π° 25g ground almonds π§ 1 tsp baking powder π§ͺ 0.5 tsp bicarbonate of soda πΎ 80g jumbo oats πΎ 40g wholewheat flour π₯ 2 large eggs π« 60g fresh blueberries π Zest and juice of 1 lemon 1. Blend the cottage cheese, maple syrup, milk, eggs and flour until smooth. 2. Add the oats, almonds, baking powder and bicarbonate. Mix again. 3. Fold in the blueberries and lemon zest and juice. 4. Divide into 6 muffin cases. 5. Bake at 160 C for 16 to 18 minutes until set and golden. 6.
