A hearty, fragrant, naturally vegan dish with rice, caramelised onions, chickpeas, and spices.

    Caramelise onions: Heat 2 tbsp oil in a large pan with lid on medium-low. Add onions + pinch of salt. Cook 15-18 mins, stirring occasionally, until deep golden and sweet.

    Bloom spices: Push onions to side. Add 1 tbsp oil, garlic, turmeric, paprika, curry powder, chilli. Fry 60 secs until fragrant. Stir into onions.

    Toast chickpeas: Add chickpeas, toss 2-3 mins until they get a little golden and pick up the spice. Season with salt & pepper.

    Add rice: Stir in rinsed rice for 1 min to coat in the oil and spices.

    Simmer: Pour in hot stock. Bring to boil, then reduce to lowest heat. Cover tightly. Cook 12 mins without lifting lid.

    Rest: Turn off heat. Leave covered 10 mins. This steams it fluffy.

    Finish: Fluff with fork. Fold through most of the fresh herbs. Taste for salt.
