Rinse bok choy thoroughly
Cut in halves or quarters if large
Heat oil in a pan or wok over medium-high heat
Place bok choy cut-side down
Cook for 2–3 minutes until slightly charred
Flip and cook another 1–2 minutes
Remove and set aside
In the same pan, add a little oil if needed
Sauté ginger and garlic for 30 seconds
Add chili flakes

Simmer for 1–2 minutes
Return bok choy to the pan
Toss gently in the sauce for 1–2 minutes
