Street corn inspired pasta salad with Elote dressing and cotija cheese.

Cook pasta according to the package. If you prefer al dente, cook it 1-2 min less than it calls for. When pasta is done, drain & toss in a drizzle of olive oil to prevent it from sticking together and let it cool.

Cook corn (or use frozen): If using fresh, cook using your preferred cooking method & remove kernels from cob. Coat with olive oil, salt, and pepper, wrap in foil, and roast in the oven at 220°C for 30 min. If using frozen corn, heat in skillet on med-high until thawed and warm, about 4-5 min.

Make dressing by combining Greek yogurt, mayo, lime zest, lime juice & spices. Whisk until creamy.

Assemble: add cooled pasta, corn, cilantro, red onion, cotija cheese, and jalapeno to a large bowl. Pour dressing on top and toss.
