
One Pot Vegan Orzo
One of the easiest one pot wonders for a midweek dinner. Also great leftovers for tomorrow’s lunch, too. An easy one to get experimental with using whatever you have in the fridge.

If using chicken, start by adding the spices, salt & pepper to a plate and thoroughly mix together. Pat each chicken breast through the spices on each side, and set aside on a plate. In a large pan, heat the oil and gently cook the chicken until crisp on each side. Once cooked, remove from the oil and set aside on a clean plate.

If not using chicken, add the oil, spices & the finely diced onion to the pan. Fry until fragrant. Once the onions are cooked and translucent, add the lemon slices and brown lightly on either side. Once browned, remove from the pan.

Add the orzo and toast in the pan until lightly golden and coated in the spices. Add a knob of butter (optional), the minced garlic and gently pour in the vegetable stock and plant-based milk. If you aren’t vegan, feel free to use dairy (milk or cream!) Add the sliced mushrooms.

Stir through, return the chicken if using (and juices on the plate) to the pan & cook gently for around 10-15 minutes.

Once cooked, stir through, taste for seasoning & add fresh chopped basil. Enjoy!
