A one-pan dump and bake curry made with tinned potatoes, butter beans, spinach, and curry sauce. Perfect for autumn comfort food.
Preheat the oven to 220°C (200°C fan).
Add the butter beans (+ reserved liquid), rice (no need to pre-cook), tinned potatoes, fresh spinach and curry sauce (plus about 100ml water shaken in the jar to catch the edges) to an ovenproof dish and stir everything together.
Season well with salt and pepper.
Top with tin foil and bake for 30 minutes.
Remove from the oven, give it a stir, then return uncovered for a final 10 minutes until bubbling and the potatoes are golden around the edges and the spinach has wilted into the sauce and enjoy.
