Peel and cube the potatoes, then add them to a pot of salted water and boil until just fork-soft. Drain the potatoes and let them steam in the pot for 5-10 minutes. Add the butter, oil, parsley, and garlic, then shake to combine. Add the potatoes to the air fryer and cook at 175C for 15-20 minutes, or until golden and crispy, shaking halfway through.
In a bowl, add the mince and seasonings, then combine. Roll into 8 equal-sized balls. Spray a pan with oil and bring to a medium heat. Add each ball to the pan and smash down into a burger patty with a spatula, then cook each side until browned and the patty is cooked through completely. Layer the burgers in a brioche bun: first marry me sauce, then burger, cheese, burger, cheese, and the bun lid. Cut in half.
Add the butter to a pan and allow it to melt. Add the diced onion and cook until softened. Add the garlic, oregano, and sun-dried tomato paste and combine. Cook for a few minutes, then pour in the stock, stir, and simmer until slightly thickened. Stir in the creme fraiche and parmesan until starting to thicken.
Add a spoonful of sauce to the plate and place the chopped burger face down into the sauce. Serve with the crispy garlic butter potatoes, garnished with parmesan and fresh chives.
