A fusion of classic chocolate chip cookies with cardamom and saffron barfi, featuring melted pockets of barfi alongside milk and dark chocolate chunks, finished plain or rolled in nuts or coconut.
In a wide pan, combine milk, butter, granulated sugar, ground cardamom, and a pinch of salt over medium heat until melted.
Stir in milk powder and saffron, cooking and stirring continuously until the mixture forms a smooth, thick barfi dough that pulls away from the pan.
Transfer the barfi dough onto greaseproof paper, cover, and roll out to about 1 cm thick. Let it cool completely.
Slice the cooled barfi into small cubes and place them straight into the freezer to firm up.
In a saucepan, melt butter over medium heat and cook until browned, caramelized, and nutty.
Pour the brown butter into a bowl and stir in a splash of milk to replace the evaporated moisture.
Add granulated sugar and brown sugar, mixing well to combine.
Mix in milk and additional milk powder until smooth.
In a separate bowl, whisk together flour, cornflour, baking soda, baking powder, and salt.
Fold the dry ingredient mixture into the wet ingredients until just combined.
Gently fold in the frozen barfi pieces, milk chocolate chunks, and dark chocolate chunks.
Use an ice cream scoop to firmly portion dough balls onto a tray for consistent size and baking.
Chill the cookie dough balls in the fridge for a few hours.
Optionally roll the chilled dough balls in chopped pistachios and almonds, desiccated coconut, or keep them plain.
Bake until caramelized around the edges while remaining soft in the center.
Neaten the edges with a round cookie cutter immediately out of the oven if desired, then transfer to a wire rack to cool.
