Crispy, golden vegetable bhajias made with finely diced potatoes, onions, and spinach spiced with crushed coriander seeds and black pepper, served alongside a vibrant homemade mint chutney.
Peel the potato and dice it into small, thin pieces. Finely dice or slice the onion in a similar size.
Chop the green chillies and roughly chop the fresh spinach.
In a large bowl, combine the diced potato, onion, chopped green chillies, and spinach.
Crush the coriander seeds gently in your hands and add them to the bowl along with the whole black peppercorns, salt, and turmeric.
Add the chickpea flour and gradually pour in water, mixing thoroughly with your hands until the vegetables are coated in a loose batter.
Heat oil for frying in a deep pan over medium-high heat. Grab small, loose portions of the vegetable batter and gently drop them into the hot oil.
Fry until golden brown and crispy on all sides, then remove with a slotted spoon and drain on paper towels.
To make the chutney, add the mint, coriander, green chilli, ginger, garlic, cumin seeds, lime juice, and yoghurt to a blender or food processor. Blitz until completely smooth.
Serve the bhajias hot with the freshly made green chutney.
