Preheat oven to 200°C (400°F). Brush pepper halves with 1 tbsp olive oil, season, bake cut-side down 15 min until slightly soft. Flip. 2. Heat 2 tbsp olive oil, cook onion 3 min. Add lamb, brown 5 min. Stir in garlic, tomato paste, oregano, salt, pepper. Off heat mix in rice/bulgur + feta. 3. Fill peppers with mixture. Top each with mozzarella + cherry tomato half. Bake 20-25 min until cheese golden. Garnish with parsley.”.
