Toss chicken in the marinade and let sit for at least 15 minutes. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through, brushing with extra marinade for a glossy finish. In a bowl, mix cooked rice with lime juice, zest, and salt. Toss avocado slices with lime juice and a pinch of salt. To assemble, place rice as the base, layer avocado slices, then top with honey lime chicken. Drizzle any remaining sauce over the stack. Garnish with fresh cilantro, lime wedges, and cracked black pepper. Serve immediately.
