Combine all the dry ingredients together except for the lemon zest and blueberries.
Mix the milk, egg, greek yoghurt and lemon zest together before adding into the dry ingredients and stirring well.
Then add the juice of half the lemon and 80g of blueberries into the mixture and combine, then top with the remaining blueberries.
Cook at 160C for 35 mins, allow to cool completely before slicing and serving.
