Crispy, spicy Paneer 65 loaded onto roasted garlic butter bread and topped with gooey melted cheese.
In a mixing bowl, combine cubed paneer, cornstarch, 2 tablespoons yogurt, lemon juice, red chili powder, cumin, garam masala, black pepper, and salt. Toss until paneer is evenly coated.
Heat oil in a pan over medium-high heat and fry the coated paneer cubes until golden and crispy. Remove and drain on paper towels.
In a small bowl, whisk together 1/2 cup plain yogurt, red chili sauce, green chili sauce, tomato ketchup, and soy sauce to form the 65 sauce.
Heat 2 tablespoons of oil in a skillet over medium heat. Add cumin seeds, minced garlic, minced ginger, slit green chilies, and curry leaves; sauté until fragrant.
Pour in the yogurt sauce mixture and simmer until slightly reduced and glossy.
Add the fried paneer into the sauce and toss until well coated. Garnish with fresh cilantro and set aside.
In a separate bowl, mix together softened butter, mashed roasted garlic, chili flakes, oregano, black pepper, and chopped cilantro.
Spread the roasted garlic butter evenly over the cut sides of the bread loaf.
Layer sliced cheese and shredded mozzarella over the garlic butter.
Evenly top the cheese layer with the prepared Paneer 65.
Bake at 200°C (400°F) for 10-12 minutes, or until the cheese is completely melted, bubbly, and browned around the edges.
Garnish with extra fresh cilantro, slice, and serve warm.
