
Lemonade & Black Pepper Battered Halloumi
A sweet, citrus twist on battered halloumi using lemonade in the batter for a delightful weekend dinner.

Cut the halloumi blocks in half lengthways to have 4 rectangles.

Place halloumi in boiling water for 20 minutes.

Lift from water, place on kitchen roll, roll out thin, and cool.

Coat in flour, tap off excess.

Sieve flour into bowl, stir in turmeric, baking powder, paprika, salt, and pepper.

Pour lemonade into flour, whisk until smooth.

Heat oil in pan, 2mm deep.

Dip halloumi in batter, fry 2-3 minutes each side until golden.

Place on kitchen roll to absorb oil.

Squeeze lemon and sprinkle sea salt before serving.
