    Boil your Saltfish in water. Once it comes up to a simmer strain the water and repeat this three times to help draw out the salt and make the fish more tender.

    Once it’s boiled for the last time remove from water and pick the meat down.

    Before discarding the water add your Ackee and allow to sit for 1 minute in the hot water.

    Remove the Ackee and set aside in a bowl.

    Chop or slice all your vegetables to even size with the exception of the garlic which you’ll want to chop fine.

    In a hot pan sautee your vegetables and thyme in either coconut oil or vegetable oil.

    Once the veg is cooked down add your Saltfish and Ackee.

    If you’ve done the steps correctly they’re both still very hot and only need to be folded into your vegetables as it’s already fully cooked.

    If your fish isn’t hot add your fish and allow to cook with the vegetable before adding your Ackee.

    Season with all purpose seasoning and black pepper.
