Gentle Energy Chicken & Sweet Potato Bowl

Peel and cube the sweet potato. Slice the onion and halve the cherry tomatoes. Mince the garlic.

Bring a small pot of water to a boil. Gently add the egg and cook for 6–7 minutes for soft-boiled. Transfer to cold water and set aside.

Heat olive oil in a pan over medium heat. Add onion and cook 3–4 minutes until soft, then add garlic and cook 1 more minute.

Add cubed chicken breast, season with salt, pepper, and paprika, and cook 6–8 minutes until browned and cooked through.

Add the sweet potato cubes and a splash of water, cover, and let steam/sauté for 8–10 minutes until tender, stirring occasionally.

Stir in the cherry tomatoes for the last 2–3 minutes of cooking so they soften slightly.

Add the warm chicken and sweet potato mix over a bowl of cooked rice. Peel and halve the soft-boiled egg and place on top. Adjust seasoning to taste and serve warm.
