A high-protein, low-fat, gluten- and dairy-free breakfast bowl featuring smoked salmon, fibre-rich white beans, and vitamin C–rich veggies to boost iron absorption and front-load calories.
Rinse and drain the white beans under cold water and set aside.
Halve the cherry tomatoes. Dice the cucumber and red bell pepper. Thinly slice the red onion. Roughly chop the baby spinach. Cut the orange into bite-sized segments, removing any seeds.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic powder, dried dill, black pepper, and salt to make the dressing.
In a medium bowl, combine the white beans, cherry tomatoes, cucumber, red bell pepper, red onion, and baby spinach.
Pour the dressing over the bean and vegetable mixture and toss gently until everything is well coated.
Transfer the dressed bean and vegetable mixture to a serving bowl.
Tear or slice the smoked salmon into bite-sized pieces and arrange on top of the bowl.
Add the orange segments over the top just before serving. Eat immediately or chill for up to 1 hour for a cooler breakfast bowl.
