Deviled kidneys

Ingredients

• 1 Pancetta
• 1 Cream
• 3 Lamb kidney
• 1 Sourdough slice
• 1 Butter
• 1 White button mushroom

Method

   Slice mushrooms, start frying in butter

   Add pancetta on half of pan. Want to brown both mushrooms and pancetta so need direct pan-contact.

   Add sliced kidneys

   When kidneys are almost cooked, add cream (optional bone broth).

   Summer and reduce until sauce is thick.

   Serve on sourdough toast
