
Seared Steak Burrito Bowl with Creamy Feta Dressing
Simple, prepable and just so good. You can swap the steak out for any protein you like.

To make the salsa, mix diced tomatoes, chopped red onion, lime juice, vinegar, honey, salt, and pepper in a medium bowl. Set aside to marinate.

For the feta dressing, blend yoghurt, feta cheese, chopped jalapeños, jalapeño brine, honey, salt, pepper and garlic granules until smooth. Adjust seasoning to taste.

Pat the steak dry and season with piri piri seasoning, salt and pepper. In a hot pan with a bit of oil, sear the steak for 2-3 minutes on each side or until desired doneness. Let rest.

Warm the precooked rice and mix with salt, pepper, chopped coriander or parsley, diced spring onion, lime zest, and lime juice.

Slice the steak thinly against the grain.

Assemble the bowls: Layer rice, sliced steak, and salsa. Drizzle with feta dressing, then top with crushed avocado and black beans. Garnish with extra herbs and a crumble of feta.
