A high-protein Chinese-style dinner with lean beef, broccoli and rice, designed to fit a 1650 kcal day while supporting gut comfort.
Cook the rice if it isn’t already prepared and set aside.
Slice the lean beef into thin strips against the grain. Chop broccoli, pepper and onion/spring onion into bite-sized pieces.
Finely chop the garlic and ginger.
Heat the oil in a wok or large pan over high heat. Add garlic and ginger and stir-fry for 30–60 seconds until fragrant.
Add the beef strips and stir-fry quickly until just browned on the outside (do not overcook to keep them tender).
Add broccoli, pepper and onion/spring onion. Stir-fry for 3–4 minutes until the vegetables are tender-crisp.
Stir in soy sauce, oyster sauce (if using) and rice vinegar or lime juice. Toss everything well and cook for another 1–2 minutes.
Serve the beef and vegetables over the cooked rice. Add chilli if you like and adjust seasoning to taste.
