Bring a large pot of salted water to a boil. Add 8 oz of your chosen pasta and cook according to the package instructions until al dente. Drain and set aside.

In a large skillet or sauté pan, heat 1 tablespoon olive oil over medium heat. Add the 2 cloves of minced garlic and stir constantly for about 1 minute, just until the garlic becomes fragrant.

Pour in the 14 oz can of diced tomatoes, juice and all. Stir to combine with the garlic-infused oil. Let this simmer for 2 to 3 minutes.

Add the 1 cup of frozen peas or mixed vegetables directly into the skillet. Stir gently, then cover and let the mixture cook for another 3 to 4 minutes.

Add the drained pasta into the skillet with the tomato-vegetable mixture. Gently toss everything together until the pasta is evenly coated in the savory sauce. Season with salt and freshly ground black pepper to taste.
