Cook the rice if you haven’t already, then set aside. White rice is usually gentler on the gut than brown for sensitive digestion.
Finely dice the carrot and zucchini so they cook quickly and are easy to digest.
Heat the olive oil in a pan over medium heat. Add the grated ginger and cook for 30–60 seconds until fragrant, stirring so it doesn’t burn.
Add the ground turkey to the pan, breaking it up with a spoon. Sprinkle with dried oregano and a small pinch of salt. Cook until no longer pink.
Add the diced carrot and zucchini to the pan. Pour in the broth, stir, and let everything simmer for 5–7 minutes until the veggies are soft.
Stir in the handful of spinach and cook for 1–2 minutes until just wilted. Taste and adjust salt if needed.
Add the warm rice to a bowl, top with the turkey–veg mixture, and spoon any extra broth over the top so it’s moist and soothing.
If you tolerate dairy, add a spoon or two of plain yogurt or kefir on the side or on top for creaminess and gentle probiotics.
Serve warm, ideally a few hours before bed, and sip chamomile tea alongside to support relaxation and sleep.
