If you don’t have cooked quinoa or rice ready, cook it according to package instructions and set aside.
Heat a pan over medium heat. Add olive oil, then add diced chicken breast (or tofu). Season with salt, pepper, and garlic powder. Cook for 8–10 minutes, stirring occasionally, until cooked through and lightly browned.
While the protein cooks, chop cherry tomatoes and cucumber, and slice the avocado.
In a bowl, add the cooked quinoa or rice as the base. Top with spinach or mixed greens.
Add the cooked chicken/tofu, cherry tomatoes, cucumber, avocado, and sprinkle pumpkin or sunflower seeds on top.
In a small bowl, mix Greek yogurt with lemon juice, a pinch of salt and pepper to make a quick dressing. Drizzle over the bowl just before eating.
