Beat 1 whole egg with 1 egg white in a bowl and season lightly with pepper.

Heat the oil in a non-stick pan over medium heat.
Add the mixed veg and stir-fry for 2–3 minutes until hot and tender-crisp.
Add the cooked rice and stir-fry for another 2 minutes, breaking up any clumps.
Push the rice and veg to one side, pour in the beaten egg, and scramble gently until almost set.
Mix everything together, season with light soy sauce and more pepper, sprinkle spring onion on top if using, and serve hot as a quick Chinese-style breakfast bowl.
