Marmite Tofu & Mash
A comforting dinner that comes together in just 20 minutes with maximum flavor.

Heat a little oil in a pan and fry off the Tofoo pieces until golden at the edges.

Pop potatoes into a pan of salted water and bring to the boil.

Let them bubble until soft enough to mash, then drain well.

Mash with remaining ingredients and lots of salt and pepper until smooth and creamy.

In a jug, whisk together veg stock, Marmite, maple syrup, and garlic powder.

Pour 1/4 of this over the tofu whilst cooking and let it caramelise.

Add remaining mix and simmer until the liquid reduces to a glossy glaze.

Steam greens until just tender.

Spoon cheesy mustard mash onto plates, pile sticky Marmite glazed tofu on top, and finish with greens on the side.
