Fry the finely minced onion and garlic paste until soft and browning.
Add the chipotle paste, tomato paste and seasonings and fry for another couple of minutes.
Add the stock, bay leaves and miso then reduce until thickened.
Add the lentils and let them cook whilst reducing.
Serve with rice and garnishes then enjoy.
