
Sausage Traybake with Cous Cous
A faff-free and tasty sausage traybake with cous cous, packed with vegetables.

Preheat the oven to 180c fan and boil the halved potatoes in salty water for about 5-8 mins. Drain and place face down on a well oiled baking sheet. Roast in the oven for 10 mins whilst you prep the rest.

Brown off the sausages on all sides and then chunk them and transfer to the oven tray. Once they’ve had 5 mins add all the prepped veg, apart from the kale, add the herbs and seasoning and return to the oven for 10 mins.

To make the cous cous, pour hot chicken stock over the cous cous and cover bowl tightly with cling film and set aside.

Add the cheese and kale to the baking tray and return to the oven for another 5-8 mins before serving.

Fluff the cous cous with a fork and then add the lemon, parsley and onion. Mix well and plate up.
